Curried Brown Rice with Pecans2014-10-13

An easy to prepare dish that goes well with pork or ham,
and spices up ordinary brown rice.
- 1 small Vidalia onion, chopped
- 3 teaspoons olive oil, divided
- 1 3/4 cup fat free chicken broth
- 1 cup instant brown rice
- 2 teaspoons curry
- 1 tablespoon brown sugar
- 4 tablespoons chopped pecans
Preheat nonstick skillet; add 1 teaspoon olive oil and onion. Cook and stir under tende and done. Set aside.
In saucepan, mix broth, rice, 2 teaspoons olive oil, and curry. Bring to a boil, reduce heat to medium to medium low, and simmer about 10 to 12 minutes until all liquid is absorbed.
Fluff rice with fork. Blend in onion, brown sugar, and pecans, serve. calories, about 125 per serving.
