Salted Caramel Butternut Squash Casserole2016-02-05

A taste delight, with a little sea salt on top!
- 1 butternut squash, medium size
- 1 egg
- 1/4 cup brown sugar blend
- 4 T. light butter
- 1/2 cup 2% milk
- 1/2 tsp ground ginger
- 1/4 tsp salt
- Sea Salt in a Grinder
Peel squash and remove seeds and insides. Cut in chunks. Boil in water about 20 to 30 minutes until soft; drain well and mash.
Add egg, brfown sugar blend, melted light butter, milk, ginger, and salt. Pour into an 8 x 8 baking dish sprayed with cooking spray.
Bake in a preheated 350 degree oven 45 minutes. Top each serving with ground sea salt. It cuts the sweet a little and makes for a delightful taste. Makes about 8 servings, about 100 calories each.
