Delicious and simple potato dish, good as side with
most meats or chicken.
- One pound red potatoes One pound red potatoes
- One medium Vidalia onion
- 2 T. light butter
- Garlic Salt
Scrub red potatoes with vegetable brush: rinse well. Cut in small chunks.
Heat butter in nonstick skillet, add potatoes and coarsely chopped onion. On mediumlow heat, cover and simmer about 30 minutes, stirring frequently to prevent sticking.
Pierce potatoes with fork to check doneness. Add garlic salt to taste, and add chives liberally, and let heat through. Four servings as side dish, about 120 calories.
